Organic muesli with warm almond milk and caramelised bananas

I have been making my own muesli combinations for years as it is efficient, economical and you can add whatever ingredients you desire. My go to combination is always organic and if possible, locally sourced. They include organic rolled oats, chia seeds, flaxmeal, sesame seeds, almonds, pepitas (pumpkin seeds), sunflower seeds, coconut flakes and cinnamon. Although soaking your oats and milk overnight is essentially easier to digest, sometimes you do not feel like oats until the morning!

In winter, I naturally crave warming breakfasts due the fact that well, its cold. This breakfast took me less than five minutes to prepare and was so delicious thanks to the combination of muesli, frothy hot almond milk and the caramelised bananas. You could easily substitute the ingredients depending on your lifestyle and ingredients on hand.


Serves 2, easily adaptable

1- 1.5 cups muesli- soaked overnight if preferred

2 cups almond milk

1 tsp cinnamon

2 ripe bananas, sliced horizontally

1 TBSP coconut oil

Maple syrup to serve

Activated pecans to serve (optional)

  1. Preheat the pan to moderate heat. Divide the muesli into two bowls.
  2. Heat the almond milk in a milk frother (or over the stove top). Meanwhile, melt the coconut oil and cook the bananas on their cut side until caramelised. Make sure they do not burn due to their natural sugar content!
  3. Pour the almond milk into the bowls and gently stir. Top with the bananas, pecans and maple syrup if desired. Enjoy!


❁ You can purchase gluten-free oats from most health food stores.

❁Substitute the almond milk with oat milk, coconut milk or other alternatives.

❁Caramelised/poached apples and pears are a delicious alternative to the banana.
