Passionfruit and banana muffins (GF)

Did you know that passionfruit grow in two seasons? Neither did I until recently. I was generously given some homegrown passionfruit from my parent-in-laws which made me so happy as they are easily one of my favourite fruits. They are loaded with vitamin C, vitamin A, flavonoids and antioxidants. Is anyone else a fan?

These muffins use buckwheat flour, making them naturally gluten-free yet high in fibre and protein. The natural combination of sweetness and tartness from the passionfruit took this muffin flavour to a delicious level. The addition of coconut flakes and pecans gave these muffins texture as well as a dose if healthy fats and extra fibre.  I used Cocobella coconut water as the liquid choice for this recipe and it added a subtle taste and perfect texture to the muffins.

RECIPE:

Makes six muffins- easily doubled

1 cup of buckwheat flour

1 TBSP tapioca flour

1 TSPN baking powder

1 TBSP flaxmeal

1 cup Cocobella original coconut water- click here for the link

1 ripe banana, mashed

1/4 cup rice malt syrup

1 TBSP melted coconut oil

1 TBSP coconut flakes + extra to top

1 TBSP activated pecans

Pulp of three passionfruit

1.Mix the buckwheat flour, tapioca flour, baking powder, flaxmeal, tablespoon of coconut flakes and pecans in bowl.

2. In another bowl, mix the banana, coconut water, coconut oil and rice malt syrup together. Add this mix to the dry mixture and stir well.

3. Divide the batter into six lined muffin holes. Using a teaspoon, add some extra passionfruit pulp to the middle of the muffin batter. Sprinkle with extra coconut flakes.

4. Bake at 180C for 35 minutes or until the middle of the muffins spring back when touched lightly.

NOTES:

❀ Whole passionfruit freeze and defrost exceptionally well. Take them out of the freezer a couple of hours before you need them.

❀I tend to use less sweetener in my baking and found 1 TBSP of rice malt syrup sufficient for these muffins thanks to the ripe banana and passionfruit.

❀Muffins can be frozen and thawed for when the sweet tooth kicks in! I recommend toasting/ heating them up in the oven to take them to next level amazing!
